I am Konstantinos Skaltsas, producer of Extra Virgin Olive Oil "Alissaeon". "Alissaeon" is a family business that produces its own extra virgin olive oil (evoo) in a traditional way, unchanged for 3 generations. Our intention and the reason for this communication, is to present "Alissaeon" and its special unique taste to the world market.
“Alissaeon” evoo is produced in a small, seaside village in the Peloponnese called Alissos. The quality characteristics of the soil, combined with the Mediterranean breeze and the abundant sun, create a unique microclimate, offering our olive oil its unique aroma and taste.
"Alissaion" evoo comes from olives of the "koroneiki" variety, the so-called "queen" of olive varieties, known in Greece since ancient times, grown in our olive groves in Achaia. The harvest takes place at the end of October when the olives are still unripe and green.The oiling is done the same day after the harvest using cold pressing (27 degrees Celsius). In addition, the kneading time of olive fruit is 40 minutes. In this way , we ensure the quality, the nutrients and the rich aromatic profile that our olive oil provides. It has a golden-green color, a fruity aroma and a soft, rich taste combined with a spicy aftertaste. "Alissaeon” evoo is recommended to be consumed by sprinkling almost any food.
